Family Sized Delicious Vegetarian Curry Stir Fry

Ingredients:

1 whole red onion (or white onion)

1 cup of peas

6 carrots

3 sweet potatoes

1 green bell pepper

2 yellow squash

½ cup of mushroom

1 zucchini

3 tbsp Olive Oil

1 tsp Himalayan pink salt

1 tsp black pepper

½  tsp cumin

1 ½ tsp of curry

1 tsp of turmeric

½ tsp garlic powder

Pinch of cayenne pepper

Pinch of paprika

Directions:

Dice all veggies then add in a bowl together.

Heat up olive oil in a large skillet. Once the oil is hot, add the onion and allow to soften, should take around 3-4 minutes.

Once the onions soften add the squash, bell pepper, mushroom, zucchini, sweet potatoes, and carrots.

Allow veggies to soften for around 10 minutes or until you can stick a fork through the sweet potatoes with ease. Once the vegetables soften add all seasonings.

Stir the seasonings into the veggies and put the top on the skillet. Allow to soften and cook for another 10-15mins.

Salt to taste and Serve hot!!!

Serves 8-9 people. ENJOY!

(Add ½ cup of vegetable or chicken stock for additional flavor and less cooking time!)
